Making yeast type doughnuts is a much more complex process than making cake doughnuts. First you need to make a dough, the dough then needs to be shaped and weighed into balls or rings, the dough balls/rings need to be proved and then the doughnuts need to be fried. In addition, the risen doughnuts need to be carefully handled to ensure the air is not knocked out of them. This means that more equipment is required.
